About Arctic Food Lab

Arctic Food Lab is a beloved food truck in downtown Tromsø, specializing in local food and traditional Nordic dishes. We're not just serving food---we're telling a story about this region, its producers, and its culinary heritage.

Every sausage we serve has a story. Every fish cake carries centuries of Norwegian tradition. Our job isn't just to feed people; it's to make them understand why this food matters in these regions.

We serve thousands of visitors from around the world throughout the Arctic winter---people who've traveled thousands of kilometers to experience something authentic. And you'll be the person who helps them understand what they're eating and why it's important.

As part of this role, you will:

  • Learn about local food and traditions -- understand the origins and significance of Arctic Nordic cuisine

  • Build relationships with local producers -- know who makes our sausages, who catches our fish, what traditions they're carrying forward

  • Become a knowledge bearer -- tell customers the stories behind what they're eating, give them a genuine sense of the region's food culture and heritage

  • Share Arctic food heritage -- turn every customer interaction into an education about Nordic food traditions

A genuine interest in food is welcomed---in fact, it's valued. You don't need professional kitchen experience; you need curiosity about where food comes from and why it matters.

The Position

You'll manage our food truck, responsible for running the entire operation:

  • Customer service and genuine hospitality

  • Cooking and serving our Arctic specialties to order

  • Handling payments and cash

  • Restocking supplies and managing stock

  • Opening and closing procedures

  • Keeping everything clean and organized

  • Telling customers about what they're eating -- the origins, the producers, the traditions, the importance

No complex food preparation required---products arrive ready to cook. Your focus is on service, customer interaction, and creating unforgettable experiences. But every interaction is an opportunity to share knowledge about this place and its food.

What We're Looking For

We're not necessarily looking for experienced hospitality professionals. We're looking for characters.

You are:

  • Friendly and naturally outgoing -- you genuinely enjoy meeting strangers and making their day better

  • Curious about food and culture -- you want to learn about local traditions and share that knowledge with others

  • Reliable and committed -- you commit to the entire season, including Christmas and New Year

  • Comfortable working under pressure -- you stay calm when there's a line wrapped around the truck

  • Able to multitask efficiently -- you handle orders, cooking, cash, and conversation all at once

  • Physically fit for hands-on work -- you're standing in a truck/booth in Arctic cold for 8+ hours; this is demanding physical work

  • Fluent in English -- additional common spoken languages are a big bonus, but not required

  • Positive, proactive, and a genuine team player -- you contribute to a good atmosphere and support your colleagues

Most importantly: You need character over credentials. We can teach you to prepare the food in a few days. We can't teach you to care.

The Reality

Let's be honest: this isn't a casual winter job or a holiday. It's demanding, intense, and cold.

You'll be standing at a booth or food truck when it's −15°C. You'll handle fifty, sixty, sometimes two hundred customers a day. You'll be restocking, cleaning, managing the whole operation on your own. The season is short and intense. Christmas and New Year are peak seasons---we don't close. You're expected to be here for the full season.

If you're thinking of coming to escape your problems, you'll find different ones here. If you're looking for an easy paycheck, this isn't it.

But here's what you should also know: this work is profoundly meaningful.

You're not hidden behind a kitchen wall. You're face-to-face with people in one of the most profound moments of their lives. Someone just saw the northern lights for the first time. Someone celebrated their birthday at your truck. A couple just got engaged in the Arctic. You're part of that story. And when you tell them where their food comes from, why it matters, the traditions behind it---you become part of their memory of this place forever.

And Tromsø itself? It's strikingly, almost violently beautiful. Whales and orcas pass nearby. The light does things that don't make sense. The northern lights dance across the sky while you're serving. Once you've done this, going back to a regular job feels hollow.

Schedule & Conditions

Season: November 1 -- March 31

Salary: 39,867 NOK/month (approximately 230 NOK/hour based on 5 days/week, 8 hours/day)

Tips: All daily tips go to the worker(s) of the day. Amounts vary depending on the season, but friendly, service-minded and outgoing people generally earn higher tips.

Work Schedule: 8 hours per day. The season runs in three phases:

PHASE 1 · November 1 -- November 19 · Food truck

  • 5 days per week

  • You work in the food truck and get to know it: the system, the dishes, the stories

PHASE 2 · November 20 -- January 3 · Christmas market booth

  • 6 days per week (2 days off every second week)

  • We move the show to our sales booth in the Christmas and new years market

  • This is the high season: longer weeks, peak intensity, and more tips

PHASE 3 · January 4 -- March 31 · Food truck

  • Back in the food truck until the end of the season

  • The extra days worked during the Christmas market are compensated with free time in January and February (weeks 3 & 5)

  • You keep your fixed monthly salary (+ tips earned) throughout all phases
